Almond cake with almond filling is a sweet and delicious dessert that is easy to make and can be served at room temperature or chilled in the summer months, for a cool treat.
• 1 box yellow cake mix
• 1 8 oz almond pie filling
• 1 8 oz heavy cream
• 1 cup confectioners sugar
• 1 tsp almond extract
• 2 cups sliced almonds
• 1 cup milk
• ¼ cup vegetable oil
• 3 eggs
* For a gluten-free cake, almond flour can be substituted for yellow cake mix.
Cake: Mix yellow cake mix, eggs, vegetable oil and milk in a bowl. Add almond extract and 1 tbs of almond pie filling. Pour equal parts of the cake batter into a 2 – 9” greased pans and bake at 275 degrees for 30 – 40 minutes. Let cake cool.
Frosting: Mix heavy cream and confectioners’ sugar until you have stiff peaks.
Assembling the Cake: Frost bottom layer of cake with remaining almond pie filling. Top with second layer and frost with whipped cream. Decorate sides of cake with sliced almonds.
