Strawberry shortcake is always great, but once you try this version you will realize that it can be even better! Paula Deen’s butter biscuits are an amazing base for a strawberry shortcake you will never forget.
Although strawberries are always available in the stores, strawberry season brings the sweetest berries and it’s strawberry season in Pennsylvania! June 1 through June 10 is prime strawberry season and the farmer’s markets are overflowing with ripe, delicious berries. If you never have strawberries the rest of the year, have them this week.
To make the strawberries for this shortcake: clean and hull about 2 quarts of berries. Slice them into a large bowl. Add ¼ cup water, ¼ cup sugar (or more for your particular taste), and 1 ½ tsp. vanilla. Using a pastry cutter/pastry blender, mix and smash the berries. Set aside while making the biscuits.

Paula Deen’s Biscuit Recipe
Ingredients for Paula Deen’s Biscuits:
- 2 cups flour
- 1 tsp. sugar
- 1 tablespoon baking powder
- 1 tsp. salt
- 8 tablespoons butter, room temperature
- ¾ cup milk
Directions for making Paula Deen’s Biscuits:
Preheat the oven to 400 degrees.
In a large bowl, combine the flour, sugar, baking powder, and salt together. Cut the butter into the mixture using a fork or a pastry cutter/pastry blender until it begins to look like cornmeal.
Make a well in the middle of the flour mixture and slowly add the milk into the well. Knead the dough with your fingers.
On a lightly floured surface, roll out the dough to about 1 inch thickness. Cut with a biscuit cutter.
Butter a baking sheet and place the biscuits on it. Bake for 12 minutes or until golden brown.
Remove from the oven to let cool for about 15 minutes. While the biscuits are still warm, cut one in half, brush it with butter, and lay it open-face in a bowl. Spoon the strawberries over the biscuit. Repeat with the other biscuits.
