Brisket available at Hannaford, North Avenue, Burlington. All ingredients can be found at Hannaford except for Penzeys Spices “Arizona Dreaming.”
This examiner substituted Arizona Dreaming spice blend for the Tom Perini dry rub.
Arizona Dreaming contains ground ancho, red pepper, jalapeño, chipotle, paprika, citric acid, lemon peel, cocoa and natural smoke flavor.
It is definitely on the hot and spicy side.
2 1/2 lb beef brisket (not corned beef brisket)
Arizona Dreaming rub, enough to cover both sides of brisket
1 part prune juice
2 parts water
1 can Coca-Cola
Preheat oven to 350′ F. Rub brisket on both sides with Arizona Dreaming.
Place in roasting pan. Roast 1 hour, uncovered.
Combine prune juice and water. Add enough liquid to pan to reach 1/2 inches. Lower oven temperature to 300’F.
Tightly cover pan with aluminum foil and continue cooking for 3 hours. Start checking brisket at 2 1/2 hour mark until fork-tender.
Let brisket rest for 25 – 30 minutes.
If brisket is too salty or made the mistake of using corned beef brisket, transfer meat to another pan or container and cover with cold water; refrigerate overnight.
Pour pan liquid into microwaveable bowl. If dipping sauce is too hot or spicy, add can of Coca-Cola, as desired.
To pickle cabbage, microwave with apple cider vinegar, caraway seeds and black pepper.
Cover with wax paper. Heat at 60 second intervals till desired texture is achieved.
This examiner prefers a tart flavor with a bit of crunch.
Sweat red onion in microwave with small equal parts of butter and water covered with wax paper.
Thinly slice brisket across the grain, drizzle with sauce. Toast whole wheat buns.
Build the sandwich. Top brisket with pickled cabbage and red onions and mayo, if desired. Serve with potato salad.
Another option, build the sandwich. Serve with watermelon and enjoy with Magic Hat Roxy Rolles Red Ale.
